1 c flour
1/4 c powdered sugar
1/2 c (1 stick) butter, melted
1 c light brown sugar
1 t vanilla
1/2 t baking powder
1 c dried cranberries
1/2 c flake coconut
1/2 c white chocolate chips
Preheat the oven to 350˚.
Mix the flour and powdered sugar with a whisk in a mixing bowl. Add melted butter. With a spatula, mix until if forms a ball of dough.
Press the dough into the bottom of an 8 x 8 baking dish. Bake for 20 minutes.
While the crust bakes, make the filling. Beat the eggs in a mixing bowl. Add the brown sugar, vanilla and baking powder and mix until smooth.
Add the cranberries, coconut, white chocolate chips and pecans. Mix until combined.
When the crust is baked, pour the filling mixture over the crust and immediately return to the oven.
Bake 20 - 25 minutes.
Allow the treats to cool for at least 15 minutes before cutting. Cut the bars into the desired size, plate them and sprinkle with powdered sugar.
