1 c flour
1/4 c powdered sugar
1/2 c (1 stick) butter, melted
1 c sugar
zest of one firm lemon
juice of one lemon
1/2 t baking powder
Preheat the oven to 350˚.
Mix the flour and powdered sugar with a whisk in a mixing bowl. Add melted butter. With a spatula, mix until if forms a ball of dough.
Press the dough into the bottom of an 8 x 8 baking dish. Bake for 20 minutes.
While the crust bakes, whisk the eggs, sugar and baking powder in a mixing bowl. Grate the lemon zest directly into the mixture.
Add lemon juice and whisk until foamy.
When the crust is baked, pour the filling mixture over the crust and immediately return to the oven.
Bake 22 minutes.
Allow the lemon bars to cool for at least 15 minutes. Cut the bars into the desired size, plate them and sprinkle with powdered sugar.
NOTE: The recipe can be quadrupled and cooked in a 12" x 17" cookie sheet.
