Chocolate Chip Cookies
1 c (2 sticks) butter, softened
1 c light brown sugar
1/2 c sugar
2 large eggs
2 t vanilla
1 T bourbon
2 5/8 c flour (2 1/2 c plus 2 T)
1 t salt
1 t baking soda
1 t baking powder
2 c chocolate chips
Preheat the oven to 375˚.
Cream the sugar into the butter until it is light and fluffy.
Add the eggs, the vanilla and the bourbon. Beat until it is completely mixed.
Add the flour, the salt, the baking soda and the baking powder. Mix until the dry ingredients are completely incorporated.
Add the chocolate chips and mix just enough to distribute throughout the dough.
Spoon the dough onto a cookie sheet in balls that are about an inch across. Cook for about 10 - 12 minutes, until the cookies are lightly browned.
