Palmiers

1 sheet frozen puff pastryMETHOD
Thaw puff pastry according to directions on the puff pastry packaging. Brush cookie sheet heavily with one tablespoon of the butter. Melt the remaining butter in a measuring cup and add vanilla. Brush the puff partry with the melted butter mixture. Sprinkle approximately two tablespoon of the granulated sugar evenly over the buttered pastry. Roll up the dough from opposing sides until the rolls meet in the middle. Cut the rolled dough with a sharp knife into one quarter inch slices. Roll the slices in sugar, convering them completely, and place them on the cookie sheet, leaving the cookies at least one inch apart.
